Essential Ingredients for Your Mugrito

- 1 large 9-inch tortilla (flour or whole wheat, whichever you prefer)
- 2 eggs (farm-fresh or organic adds extra flavor)
- 2 tablespoons beans (pinto or black beans, drained and rinsed if canned)
- 2 tablespoons cheddar cheese, grated (substitute with Monterey Jack or pepper jack for a twist)
- 2 tablespoons scallions, chopped (green onions work perfectly)
- Salt and pepper (to taste)
- Garnish options: salsa and sour cream (feel free to add guacamole or hot sauce for extra flair)
Simple Steps to Make Your Mugrito
- Prepare the mug: Place the tortilla inside a large microwavable mug. It will naturally fold to fit the shape of the mug.
- Add the eggs: Crack the eggs into the mug and whisk them with a fork, being careful not to tear the tortilla.
- Mix in the fillings: Add the beans, cheese, and scallions. Season with salt and pepper, then mix everything together well.
- Microwave: Cook on high for 1 minute and 20 seconds (for a 1200W microwave). Check if the eggs are still runny; if so, microwave in 15-20 second intervals until fully set. Watch closely to avoid overcooking.
- Rest and serve: Let the mugrito sit for 3 minutes to cool slightly. Enjoy it straight from the mug or roll it up like a classic burrito. Top with salsa and sour cream for the perfect finish.
Customize Your Mugrito with Fun Mix-Ins
Get creative with your Mugrito by adding your favorite ingredients! Try diced ham, cooked bacon, or crumbled sausage for a protein boost. For veggies, spinach, bell peppers, or mushrooms work great. Don’t forget a sprinkle of hot sauce or a dollop of guacamole for extra flavor. The possibilities are endless!
Perfect Pairings for Your Mugrito
Serve your Mugrito with a side of fresh fruit or a small salad for a balanced breakfast. A cup of coffee or orange juice complements it perfectly. For a heartier meal, pair it with hash browns or avocado slices. It’s a quick and satisfying start to your day!
Quick Tips for Microwave Success
To avoid overcooking, check your eggs every 15 seconds after the initial cook time. If your microwave is less powerful than 1200W, you may need to add 10-20 seconds. Use a large mug to prevent spills and ensure even cooking. Patience is key—let it cool before digging in!
How to Store and Reheat Leftovers
If you have leftovers, wrap your Mugrito in foil or place it in an airtight container. Store it in the fridge for up to 2 days. To reheat, microwave for 30-45 seconds or until warmed through. Pro tip: Add a splash of water before reheating to keep it moist.
Make-Ahead Mugrito Magic
Prep your ingredients the night before to save time in the morning. Chop veggies, grate cheese, and store them in the fridge. In the morning, just assemble and microwave. It’s the ultimate hack for busy mornings!

Microwave Breakfast Burrito in a Mug: Mugrito
Ingredients
- 1 large 9 inch tortilla (flour or whole wheat)
- 2 eggs
- 2 tablespoons beans (pinto/black beans)
- 2 tablespoons cheddar cheese, grated
- 2 tablespoons scallions, chopped
- salt and pepper
- Garnish
- salsa
- sour cream
Instructions
- In a large microwavable mug press in a fresh tortilla. It will naturally fold into the shape of the mug and find its way.
- Crack in your eggs and whisk up with a fork, taking care not to tear the tortilla.
- Now add in your favorite burrito mixins like cheese, beans, and scallions. Season with salt and pepper and mix all together. Whatever ingredients you have to hand will work great.
- Microwave for 1 minute 20 seconds. Check, and if the eggs are still liquid, cook for another 15 -20 seconds. Keep an eye during cooking so the eggs don’t overheat. You don’t want an egg-splosion in your microwave. The cook time is based on my 1200W microwave so yours might vary.
- Once done, let it sit for 3 minutes to cool and serve with some sour cream and salsa on top. I like to eat a little out of the middles and then lift it out of the mug and roll it like a burrito.
