What You’ll Need

- 1 can (15 oz/425 g) cooked chickpeas
- 1/2 teaspoon olive oil
- 1/2 teaspoon garlic powder (or fresh minced garlic for a stronger flavor)
- 1/2 teaspoon cayenne pepper (preferably smoked for a deeper taste)
- Pinch of salt (adjust to taste)
How to Make It
- Drain and rinse: Pour the chickpeas into a colander or sieve and rinse under cold water for about 30 seconds.
- Dry the chickpeas: Pat them dry using several layers of paper towels to remove excess moisture.
- Season: Place the dried chickpeas in a bowl. Drizzle with olive oil, then add garlic powder, cayenne pepper, and salt. Mix gently until the chickpeas are evenly coated.
- Microwave: Cook in the microwave for 1 minute. Remove, toss the chickpeas, and microwave for another 20-30 seconds if you prefer them crispier. (Timing is based on a 1200-watt microwave; adjust as needed.)
- Serve: Enjoy immediately as a snack or side dish. Store leftovers in the fridge for up to 3 days.
Spice It Up: Sauce and Topping Ideas
Take your spiced chickpeas to the next level with a drizzle of tahini sauce or a squeeze of fresh lemon juice for a tangy twist. For a creamy option, mix Greek yogurt with a pinch of cumin and a dash of honey. If you’re feeling adventurous, sprinkle with crumbled feta or chopped fresh herbs like cilantro or parsley for added flavor and texture.
Perfect Pairings: Serving Suggestions
These spiced chickpeas are versatile! Serve them as a crunchy snack straight from the bowl, or use them as a topping for salads or grain bowls. They also make a great side dish alongside roasted vegetables or grilled chicken. For a quick meal, toss them into a wrap with hummus and fresh veggies.
Keep It Fresh: Storage and Reheating Tips
Store your chickpeas in an airtight container in the fridge for up to 3 days. To reheat, pop them in the microwave for 20-30 seconds or warm them in a skillet over medium heat for a few minutes. If they lose their crispiness, a quick toast in the oven at 350°F (175°C) for 5 minutes will bring them back to life.
Mix It Up: Recipe Variations
Experiment with different spices to suit your taste! Swap cayenne for paprika or curry powder for a milder flavor. Add a pinch of cumin or turmeric for an earthy twist. For a sweet and savory combo, toss in a teaspoon of maple syrup or honey before microwaving.
Microwave Mastery: Equipment Guidance
Since microwave wattages vary, start with 1 minute and adjust as needed. If your microwave doesn’t have a turntable, pause halfway to toss the chickpeas for even cooking. For extra crispiness, spread them in a single layer on a microwave-safe plate lined with parchment paper.
