Ingredients for Neapolitan Popsicles

Ingredients for Neapolitan Popsicles
  • 1 cup (8oz/225g) plain Greek yogurt
  • 1 cup (8floz/225ml) cream
  • 3/4 cup (6oz/170g) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups (10oz/284g) strawberries, pureed and strained (fresh or frozen and defrosted)
  • 3 tablespoons cocoa powder
  • Milk (optional, to thin the mixture if needed)

Step-by-Step Instructions

  1. Prepare the strawberry puree: Blend the strawberries in a food processor until smooth. Strain the mixture through a sieve to remove seeds. Set aside.
  2. Make the base mixture: In a mixing bowl, whisk together the Greek yogurt, cream, sugar, and vanilla until the sugar dissolves completely.
  3. Divide and flavor: Split the base mixture into 3 separate bowls. Add the strawberry puree to one bowl and mix well. Add the cocoa powder to another bowl and mix until combined. Leave the third bowl as the vanilla base.
  4. Assemble the popsicles: Pour the chocolate mixture into a jug with a spout. Fill each popsicle mold about 1/3 of the way with the chocolate flavor. Freeze for 30 minutes to set the layer.
  5. Add the next layer: Repeat the process with the vanilla mixture, filling the molds another 1/3 of the way. Freeze for another 30 minutes.
  6. Finish with the strawberry layer: Pour the strawberry mixture into the molds, filling them to the top. Insert popsicle sticks and freeze for 3-5 hours or overnight until solid.
  7. Serve: To remove the popsicles, run the molds under warm water for 5 seconds and gently pull on the sticks. Serve immediately or store in the freezer for up to 8 weeks.

Fun Topping Ideas to Elevate Your Popsicles

Take your Neapolitan Popsicles to the next level with creative toppings! Dip the chocolate layer in melted dark chocolate and sprinkle with crushed nuts for a crunchy twist. For the strawberry layer, roll it in freeze-dried strawberry powder for an extra burst of flavor. The vanilla layer pairs beautifully with a drizzle of honey and a sprinkle of toasted coconut flakes. Let your imagination run wild!

Perfect Serving Suggestions for Any Occasion

These popsicles are a hit at summer parties or as a refreshing dessert after a BBQ. Serve them on a platter lined with crushed ice to keep them cool. For a fun twist, pair them with a mini chocolate fondue for dipping. Kids and adults alike will love the nostalgic Neapolitan flavors in a handheld treat!

Time-Saving Tips for Busy Days

Short on time? Use store-bought strawberry puree or jam (strained) instead of making your own. You can also prepare the yogurt base the night before and store it in the fridge, so you’re ready to assemble the popsicles the next day. If your molds are freezer-safe, skip the 30-minute freeze between layers—just work quickly to layer the flavors before freezing.

Equipment Guidance for Popsicle Success

Invest in a good-quality popsicle mold with sturdy sticks for easy removal. A large jug with a spout makes layering the flavors a breeze. If you don’t have a food processor, a blender or immersion blender works just as well for making the strawberry puree. For straining, a fine-mesh sieve is your best friend to ensure a smooth texture.

Storage Tips to Keep Popsicles Fresh

Once frozen, store your popsicles in an airtight container or wrap them individually in parchment paper to prevent freezer burn. They’ll stay fresh for up to 8 weeks, but let’s be honest—they’ll probably disappear long before then! To enjoy, simply run the mold under warm water for 5 seconds to release the popsicle easily.

  • 1 teaspoon vanilla extract
  • 2 cups strawberries, pureed and strained
  • 3 tablespoons cocoa powder

  • Now assemble your popsicles: Starting with the chocolate flavor transfer the yogurt mixture into a large jug with a spout.
