Breakfast Parfait (Mother’s Day Brunch)

This Breakfast Parfait is a vibrant and effortless way to celebrate Mother’s Day with layers of creamy yogurt, crunchy granola, and juicy berries. In just 10 minutes, you can create a dish that’s as beautiful as it is delicious, perfect for a special brunch.

- 1/2 cantaloupe, seeds removed
- 1/2 cup vanilla greek yogurt (4oz/120g)
- 1/4 cup granola (11/2oz/45g)
- 1/2 cup of your favorite mixed berries (21/2 oz/75g) (I used strawberries and blueberries)
Cut open the cantaloupe. Using a spoon scoop out the seeds from the center and discard.
Fill the hole with the yogurt.
Top generously with berries and granola arranging in groups.
Garnish with fresh mint and enjoy!
