This Breakfast Parfait is a vibrant and effortless way to celebrate Mother’s Day with layers of creamy yogurt, crunchy granola, and juicy berries. In just 10 minutes, you can create a dish that’s as beautiful as it is delicious, perfect for a special brunch.

Ingredients
  

  • 1/2 cantaloupe, seeds removed
  • 1/2 cup vanilla greek yogurt (4oz/120g)
  • 1/4 cup granola (11/2oz/45g)
  • 1/2 cup of your favorite mixed berries (21/2 oz/75g) (I used strawberries and blueberries)

Instructions
 

  • Cut open the cantaloupe. Using a spoon scoop out the seeds from the center and discard.
  • Fill the hole with the yogurt.
  • Top generously with berries and granola arranging in groups.
  • Garnish with fresh mint and enjoy!
