These Funfetti Rice Krispies Treats are a playful twist on a classic, combining the nostalgic crunch of crispy cereal with the joyful burst of colorful sprinkles. In just 23 minutes, you can create a treat that’s as fun to make as it is to eat, with a chewy, gooey texture that’s perfectly balanced by the light, airy crunch.

Ingredients
  

  • 5 ½ cups Rice Krispies cereal
  • 2 ½ cups Fruity Pebbles cereal
  • 1 cup white chocolate chips plus an extra handful for topping (optional)
  • ¼ cup butter
  • 5 cups marshmallows

Instructions
 

  • Line a 9x13-inch (23x33 cm) pan with parchment paper and set aside.
  • In a large bowl, combine the Rice Krispies cereal, Fruity Pebbles cereal and 1 cup (6 oz/170 g) white chocolate chips. Set aside.
  • Add the butter and marshmallows into a large, microwave-safe bowl and cook on high for 30-seconds at a time, stirring in between, until the marshmallows are melted. This will take 2-3 minutes.
  • Carefully fold the cereal mixture into the melted marshmallows until fully coated, taking care not to crush the cereal.
  • Pour the mixture into the prepared pan and very gently spread and flatten into an even layer. If desired, sprinkle a few more white chocolate chips over the top, pressing down gently to help them adhere.
  • Let the Rice Krispie treat set for an hour before cutting into squares. Store at room temperature in an airtight container for up to 7 days.
