This Sweet & Simple Keto Mug Cake is your go-to treat when you need something indulgent yet guilt-free. In just 5 minutes, you can whip up a moist, fluffy cake that’s rich in flavor and low in carbs.

Ingredients
  

  • 1 tablespoon butter (½oz/14g)
  • 2 tablespoons full fat cream cheese (1oz/28g)
  • 2 tablespoons coconut flour (½oz/14g)
  • 1 tablespoon granulated sweetener (½oz/14g)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon baking powder
  • 1 large egg
  • 6 raspberries fresh or frozen

Instructions
 

  • Place butter and cream cheese in a microwave-safe mug and microwave for 20 seconds to soften it.
  • Add the coconut flour, sweetener, vanilla, baking powder, and egg, and mix thoroughly.
  • Scrape down the sides of the mug and then gently fold in the raspberries.
  • Microwave for 1 minute. Check for doneness, and microwave for a few seconds more if need be. (This timing is based on my microwave which is 1200W)
  • Let cool for 5 minutes before eating. Store leftover mug cake covered at room temperature for up to one day.
