Ingredients
  

Wet Ingredients

  • ½ cup buttermilk, at room temperature
  • ½ cup unsweetened applesauce
  • ¼ cup vegetable oil
  • 2 large eggs, at room temperature

Dry Ingredients

  • ½ cup granulated sugar
  • cup dark brown sugar
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • Powdered sugar, for serving (optional)

Instructions
 

  • Preheat the oven to 350°F (180°C) and line an 8-inch (20-cm) square pan with parchment paper. Set aside.
  • In a medium bowl, whisk together the buttermilk, applesauce, oil, eggs, granulated sugar, brown sugar and vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg and cloves, then mix the dry ingredients into the wet just until smooth.
  • Pour the batter into the prepared pan and bake for 30-40 minutes, until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
  • Serve simply as is or with a dusting of powdered sugar. Store leftovers in an airtight container at room temperature for up to 3 days.
