Wet Ingredients
- ½ cup buttermilk, at room temperature
- ½ cup unsweetened applesauce
- ¼ cup vegetable oil
- 2 large eggs, at room temperature
Dry Ingredients
- ½ cup granulated sugar
- ⅓ cup dark brown sugar
- 1 teaspoon vanilla extract
- 1 ¼ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- Powdered sugar, for serving (optional)
Preheat the oven to 350°F (180°C) and line an 8-inch (20-cm) square pan with parchment paper. Set aside.
In a medium bowl, whisk together the buttermilk, applesauce, oil, eggs, granulated sugar, brown sugar and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg and cloves, then mix the dry ingredients into the wet just until smooth.
Pour the batter into the prepared pan and bake for 30-40 minutes, until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
Serve simply as is or with a dusting of powdered sugar. Store leftovers in an airtight container at room temperature for up to 3 days.
